Blackened Salmon Sandwich

Blackened Salmon Sandwich for Two

This recipe was shared as part of my Quick Dinner series on Instagram. These dinners can be made with minimal ingredients, using what I keep stocked in my kitchen.

Ingredients

  • ¾ Tbsp. avocado oil
  • 2 (4 oz.) salmon fillets
  • 2 tsp blackened seasoning
  • 2 slices of Asiago cheese
  • 1 small avocado
  • 2 tbsp. garlic aioli mustard
  • 2 sesame seeded buns
  • 1 cup baby spinach
  • ¼ c. thinly sliced onion
 

Instructions

  1. Heat 1/2 oil in a nonstick skillet over high heat. (I prefer using my cast iron skillet for this.)

  2. While the skillet is heating… brush melted butter on the top and bottom of the salmon. Then, rub the blackened seasoning on top of the salmon.

  3. Cook salmon through (3-4 minutes per side). Remove from skillet and set aside.

  4. Drizzle remaining 1/4 tablespoon in skillet and allow to heat.

  5. Place spinach in skillet and cook until the leaves just begin to wilt. Remove and set aside.

  6. Mash avocado and garlic aioli in a small bowl.

  7. Spread the mixture on the bottom half of each roll. Top with cheese slice, salmon, spinach, tomato and onion.

  8. Serve with roasted asparagus, sauteed zucchini, or your favorite chips.
