Pound Cake Croutons

Just the right amount of a lil’ something sweet to balance your salad.

Ingredients

  • 4 c. pound cake, diced
  • 2 Tbsp. butter
  • 1 Tbsp. olive oil
 

Instructions

  1. Preheat oven to 375°.

  2. In a large skillet, heat 1 tablespoon butter and 1/2 tablespoon olive oil over medium heat.

  3. Once butter has melted, add two cups of diced pound cake to skillet; toss to combine.

  4. Transfer pound cake to a baking sheet lined with parchment paper.

  5. Add remaining butter and olive oil to skillet, and repeat with remaining two cups of pound cake.

  6. Bake pound cake for 8 to 10 minutes, until diced cake is golden brown and toasted.

  7. Allow to cool before serving over salad.

  8. Place any leftover pound cake croutons in an air-tight plastic bag or container. Will last up to two days when stored in a dry area.
